Ground Beef Bonanza

My dad is the master of throwing a bunch of stuff in a pot and making it taste phenomenal.  Well, what can i say? Like father like son.

Ingredients
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 (15-ounce) can red beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can sweet peas, drained
  • 1 green bell pepper, seeded and chopped
  • 15 baby carrots, chopped
  • 2 cups uncooked spinach
  • 3 tablespoons chili powder
  • 2 teaspoons sea salt
Directions
Brown ground beef over medium high in a deep saute pan. Reduce heat to medium and add the onion, red beans, black beans, corn, sweet peas, bell pepper, carrots, spinach, chili powder and sea salt. Mix well, cover and cook for 15-20 minutes or until carrots and bell peppers are soft. Stir occasionally.
This meal ended up terrific, the small veggies and ground meat make you forget that you're not eating this with rice. Enjoy!
